Ever find yourself with strawberries that are getting a bit soft and you hate to let them go to waste?

Small batch strawberry jam is a quick and easy way to make sure your strawberries don’t just end up in the composting!
This 4 ingredient recipe uses strawberries, sugar, chia seeds, and lemon juice.
Cut the strawberries into quarters and add to a pot along with the sugar and a dash of lemon juice. Cook on a low heat until the strawberries are tender.

Remove from the heat, mash, and add the chia seeds to thicken. It will not thicken immediately as the chia seeds take time to absorb the moisture.

While still hot, scoop into small jars, close the lid and flip upside-down until it cools.

Store in the fridge for up to 2 months.

Recipe
1 cup strawberries
1/3 cup white sugar
1 teaspoon lemon
1 tablespoon chia seeds
Cook strawberries, sugar, and lemon juice on low heat until soft.
Mash and add chia seeds.
Scoop into jars, seal lids, and place upside-down until cool.
Store in fridge for up to 2 months.
